Delectable Pot Roast

Confession: I never used to like pot roast.  I'm pretty sure I spent the first 20 years of my life, if not more, disliking pot roast.

I am not at liberty in such a public place to explain why I didn't like it.  It's a personal thing.

Anyway, it wasn't until I started experimenting with it...and until I started using a crock pot...that I decided that it was possible to l-o-v-e me some pot roast.

So here's what I've come up with over time!

Start with one large onion...


And peel and slice it up real purty like.



Then take these beautiful carrots...


Peel em and cut 'em up.


Arrange them attractively in the crock pot.  Because it's all about appearance.  Okay, not really, but it makes a nice picture.



Take two garlic cloves...


Smash 'em.  Peel 'em.  Mince 'em.


 

Oh, and don't forget: When you take a picture of the garlic, make sure it's not in focus.

Sprinkle the garlic over the attractive onions and carrots.



And then here's something I didn't use in the past but, since working with the beouf bourguignon recipe and knowing how delicious that is, I've been using it in my stews and roasts since then.



I just love tomato paste.  I love that rich, terrific flavor it lends.  And it's pretty.  So I added two tablespoons of it.

Finally, it was the time I had been waiting for.  It was time to sear the roast.

My favorite time.

Sorry.  I sing to my food.  I believe the food is then inspired to taste better.


I dried the roast off with paper towels and sprinkled it liberally with salt and pepper while heating olive oil in a large pot.

And then that happened.  On all sides.  And it was good.

Once the roast was seared with a lovely crust on all sides, I placed it on top of the veggies, etc in the crock pot.  Then I used beef stock in the pot to pick up all of the brown bits which the roast thoughtlessly left behind while searing.


Silly roast.

I poured that stock over the roast and its friends.

And then...I got a little naughty.

Maybe...a lot naughty.

See...I had this bacon sitting in my fridge...


And I didn't want it to go to waste or anything.  Because wasting food is wrong.  Especially if "food" is delicious bacon.

So I layered the delicious bacon over the roast.  It was wrong...and yet it felt oh so right.

A sprinkle of fresh parsley and a palmful of dried thyme and voila...t'was ready for cooking!


After 8 hours on low, I was left with this...


The smell? Divine.

The meat? Fork-tender.


It was ridiculous.  Ridiculous, I say.

Serve it up with those carrots and onions, and perhaps some buttered eggs noodles, and the gravy that you make out of the juices and flour (if that's your thing)...and you've got a meal on your hands.

Wow, this really does look divine. I never thought of the bacon on top, but I'm sure that would add an awesome flavor. And yours really is beautiful! :)

Oh My Goodness!!!! That looks scrumdeliicious!!! Infact, it looks good enough to eat!! o;-p

I too HATED pot roast as a child and as a teen .... for one, I didn't know that it could be served 'fork tender'. I had always been under the impression that it was always served in a just shy of jerky style. To this day, I HATE hard chewy meat!!!!!!!!

For two, the process of getting the roast into the just shy of jerky state, required baking the meat until it was ever so attached to the pan, and the pan took e-v-e-r so many times of scrubbing, soaking with HOT sudsy water, and scrubbing, and repeating, and repeating, and ..... Hum mmm I do believe that is why I am ever so hooked on pan coating sprays. In-fact, I did a posting once on tons of wonderful ways I use it o;-p

Thought you might be interested in the fact that you can make powdered tomatoe paste. Michelle at Big Black Dog did a posting about it. I had never heard of it before.

Roasts and bacon just go so well together. A suggestion - next time, wrap the pieces of bacon around the exterior of the whole roast, and hold the pieces in place with wooden toothpicks.

We do that method with bread stuffing stuffed pork loins.

Your last photo looks like the two pieces of meat are kissing. A romantic roast.

It does look good and makes me appreciate crockpots besides good cooks, of course.

I didn't use to like pot roast either...probably because my mother cooked it to death. But then I discovered my crockpot. And it was like a whole world opened up to me.

Your version looks delicious! Love the tomato paste addition!

I liked your 'comment', chuckle, chuckle. Wish I didn't understand it so well o;-p

After I signed off last night, I realized that I had forgot to add one of the comments that had come to mind. We are both "Mrs. B." - and I could definetly qualify for a "misadventures" title o;-p I have 'Lucy' moments a bit too often.

Today I read down through your last couple of postings. For the record - I TOTALLY get your sarcastic, tounge in cheek, sassy humor!!! It's wonderful. I have a feeling it springs from similar reasonings to not likeing pot roast ..... but I could be wrong there.

? you and your husband were both sitting at the table on your computers, you hope to have children of your own someday, and yet the TV was on in the living room ....? Do children live with you who aren't yours? Do you live with your family - you did comment on your siblings .... - should I just keep reading backwords (as in past postings - not backwords in my sons dyslexic style ;-p)to find my answers and not bother you?

Oh, how are your feet doing today? The next time that turtle passes you, ask him for a lift ;-p

And I too always wondered about the BeeGees style. actually, their style of singing and their clothing and hair styles ;-p And yet, to be honest, I must admit tht I did like some of their stuff. Yeah, I'm weird.

p.s. the Ginseng Tea is an AWESOME tea for energy. It was for anyways. I like it because it's Caffeine free(no stains on my teehties OR won't make me sick) if I take an energy pill or drink that has TOO much caffeine it makes me so super sick. That looks like a wonderful meal that doesn't take a lot of work. Those are the best kind. I think the addition of the bacon is probably the best part!
